What this site is, and how it is written
Slower Hours is a small publication about coffee made at home. This page covers what gets published here, where the facts come from, and what the site does not do.
Coffee is the most commonly made hot drink in the country and one of the least examined. A great deal of what gets passed between kitchens as settled fact — that boiling water is correct, that freezing beans ruins them, that espresso carries the largest dose of caffeine — turns out to be wrong, or true only under conditions nobody mentions.
That gap is what this site is for: things that are common knowledge in one kitchen and completely unknown in the next, written down plainly and checked where checking is possible.
What Slower Hours publishes
Two kinds of pieces run here:
- Brewing. Method, ratio, grind, temperature, equipment care. The parts that change the cup, in the order that they change it.
- Research Desk. Claims about coffee checked against published work, with the study, the journal and the year named so a reader can go look. Coffee attracts a great deal of confident folklore, and some of it turns out to be true.
How it gets written
When an article makes a factual claim, the source is named in the text rather than gestured at — the Specialty Coffee Association brewing range, the USDA nutrient database, a named study in a named journal. Where the evidence is thin or contested, the article says so instead of picking a side for the sake of a cleaner sentence. Where something is a matter of preference rather than fact, it is labeled as preference.
Measurements here are American: degrees Fahrenheit, ounces, tablespoons. Where precision genuinely requires grams, as it does for a coffee-to-water ratio, the gram figure appears next to the ordinary kitchen measure rather than instead of it.
Corrections
If something here is wrong, it is worth knowing. Corrections are published on the article itself, dated, with the original error described rather than quietly deleted. Write to hello@slowerhours.com.
What this site does not do
No advertising, no sponsorship, no affiliate links, no products for sale. No brand has paid for a mention here, and none has been offered one. If that ever changes, it will be disclosed at the top of the article in question, not in a footnote.
No newsletter, no accounts, no comment forms. There is nowhere on this site to type your name or your email address, which is deliberate. See the privacy policy for what that means in practice.
